Sweet Corn Soup

In 6 large fresh corncobs ¾ teaspoon Ajinomoto (baking soda)
½ teaspoon Soya Sauce , 2 table spoon Corn flour , ½ table spoon sugar, salt to taste , green chillies in vinegar.

Method: (1) Grate the corn . Take out a few whole Corns, add 6 teacups of water to cook in a pressure cooker
(2)Mix the Corn flour in 2 tea cups of cold water and add to the cooked corn mixture .
Put to boil and the sugar. Ajinomoto powder and salt.
(3) Boil for at least 30 minutes .Add the Soya sauce serve hot with chillies in vinegar and chilli
Sauce.

Manchow Soup

In: 2 cup vegetable stock , 1tbs small cut vegetables (Carrot, cabbage, cauliflower, French beans and Capsicum).

1tbs small pieces of garlic. 1tbs small pieces of green chillies ,1tbs small pieces of ginger,
1 ½tbs soya sauce. 1tbs cornflour. 1/8 teaspoon white pepper powder. Salt to taste.

Method:
(1) Heat the oil. Add garlic, green chillies, ginger and finely cut vegetables and Ajinomoto.
(2) Then add vegetable stock, soya sauce ,salt and white pepper powder.
(3) Mix cornflour in ½ cup water and then put it in the boiling soup. Boil it for I min and then serve it hot.

Zesty pepper and paneer balls add flavour to this simple and elegant soup.

Preparation Time : 10 mins.

 

Serves 4.

 

For the pepper and paneer balls

 ½ cup crumbled low fat paneer (cottage cheese)/ tofu (soya paneer)

 2 tablespoons chopped parsley 

 ½ teaspoon mustard (rai) powder

 Salt and freshly ground pepper to taste

 

Other ingredients

=================

 ½ cup chopped onions

 3 cups vegetable stock

 2 teaspoons corn flour 

 2 teaspoons oil, preferably olive oil

 Salt and freshly ground pepper to taste

 

For the garnish

 1 tablespoon chopped parsley

NUTRITIOUS PANEER SOUP

A lip-smacking calcium rich soup which serves as a good change to begin a meal.

Cooking Time : 25 mins.
Preparation Time : 10 mins.

Serves 6.

100 grams low fat paneer (cottage cheese), cut into thin strips
2 tbsp yellow moong dal (split yellow moong)
¾ cup spinach (palak), finely chopped
½ cup onions, finely chopped
1½ tsp low fat butter
salt and pepper to taste

THAI VEGETABLE SOUP

A light lemon grass flavoured Thai style soup packed with a wealth of all B vitamins.

Cooking Time : 20 mins.
Preparation Time : 10 to 15 mins.

Serves 6.

For the Thai vegetable stock

2 litres water
6 peppercorns
1 cup onions, quartered
2 cups carrots, chopped
2 whole lemon grass stalks, washed
salt to taste

Other ingredients
=================
½ cup tofu or low fat paneer (cottage cheese), cut into small cubes
½ cup chopped spring onions
½ cup sliced mushrooms
½ cup coriander, chopped
½ cup spinach (palak), shredded
½ cup baby corn, sliced and blanched
1 cup bean sprouts
1 small bowl chilli vinegar
10 flakes garlic
2 tbsp soya sauce
1 tbsp low fat butter
chilli powder to taste

CLEAR COTTAGE CHEESE SOUP

A simple yet spicy soup cooked “fat free” and enriched with protein by the addition of bean sprouts and paneer.
