HEALTHY BROWN ONION SOUP

 

Zesty pepper and paneer balls add flavour to this simple and elegant soup.

 

Cooking Time : 20 mins.

Preparation Time : 10 mins.

 

Serves 4.

 

For the pepper and paneer balls

 ½ cup crumbled low fat paneer (cottage cheese)/ tofu (soya paneer)

 2 tablespoons chopped parsley 

 ½ teaspoon mustard (rai) powder

 Salt and freshly ground pepper to taste

 

Other ingredients

 ½ cup chopped onions

 3 cups vegetable stock

 2 teaspoons corn flour 

 2 teaspoons oil, preferably olive oil

 Salt and freshly ground pepper to taste

 

For the garnish

 1 tablespoon chopped parsley
